Remember the 15-minute Rosh Hashanah dinner?Curing The Cheshvan Blues: The Four-Minute Pumpkin Spice Muffin

Today I bring you something even better. The four-minute, no-butter pumpkin spice muffin- aka the perfect way to get rid of the Cheshvan blues. This recipe makes 12 muffins, which means half of them are gone in my house at dinner, and the other half are gone by the time I make lunches the next morning.  

That’s a long way of saying that you should double this recipe if you have five or more kids… although I bet that’s not many of you.

What you need

2 cups flour

¼ cup sugar

1 tsp salt

3 teaspoons baking powder

3 tablespoons olive oil

2 tablespoons applesauce

1 cup milk

1 egg

2 tablespoons pumpkin pie spice

What To Do

Preheat oven to 400 degrees

Mix the dry ingredients, add the wet ingredients. Stir briskly.

Scoop the mix into muffin cups, taking care to leave about 1/3 of the cup empty.

Place in oven, enjoy the  smell of pumpkin spice, and then the warm and quasi-fluffiness about 20-25 minutes later.

Alternate Plan

Have your older kids make them- it’s that easy. Then this four-minute recipe actually becomes the zero-minute recipe. And you can’t get any better than that.
