Chosen Eats: Multi-Colored Summer PopsiclesThese popsicles need little explanation. To me, they symbolize summer and the Fourth of July. When I was younger, the holiday marked the middle of what my siblings and I dubbed the “Wednesday Races,” which were weekly foot races held at a nearby outdoor track after school let out for the summer. We’d compete against kids our own age, collect our colored ribbons, and then cap the night off with a treat from the ice cream truck that was always parked right outside the track’s entrance.

My favorite was the Turbo Rocket, a multi-colored frozen treat that cooled me off on those sweltering summer nights. I probably spent the entire contents of my piggy bank on them throughout the months of June and July. If only I’d known how easy—and inexpensive—they were to make at home!

Multi-Colored Summer Popsicles

Makes about 10 to 14 popsicles, depending on the size of your molds

2 cups fresh strawberries, roughly chopped
1½ cups fresh blueberries
1 cup yogurt (plain, vanilla or Greek)
1 tablespoon plus 2 teaspoons lime juice, divided
1 tablespoon plus 1 teaspoon sugar, divided

1. Add strawberries, 1 teaspoon lime juice, 1 teaspoon sugar and 1 teaspoon water to blender. Process until smooth. Transfer to bowl or cup and set aside. Rinse blender.

2. Add blueberries, 1 teaspoon lime juice, 1 teaspoon sugar and 1 teaspoon water to blender. Process until smooth. Transfer to bowl or cup and set aside.

3. In medium bowl or large cup, whisk together yogurt, 1 tablespoon lime juice and 2 teaspoons sugar until thoroughly combined.

4. Spoon or pour strawberry mixture into popsicle molds until each mold is filled one-third of the way. Transfer to freezer and freeze for one hour.

5. Remove popsicle molds from freezer and spoon or pour yogurt mixture into molds until remaining mold is filled halfway. Top with blueberry mixture until mold is full. Transfer to freezer until frozen, at least 4 hours and preferably overnight.
