Moroccan Carrot Salad

2 lbs carrots
3 cloves minced garlic 
2t paprika
1T cumin
½ c lemon juice
2 T chopped parsley
3T olive oil

Blanch and slice carrots, combine all ingredients except parsley and olive oil and chill. Prior to serving add olive oil and parsley and combine.
Serves 8-10.
