Enjoy this easy, healthy Chanukah recipe submitted by Elizabeth Sternberg, Family Connections reader, great cook and mom to David.

Low-Fat, Crispy & Delicious Sweet Potato Latkes

Start to finish: 30 minutes

1 pound sweet potatoes, peeled and coarsely grated
2 scallions, finely chopped
1/3 cup all-purpose flour
2 large eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
Vegetable oil (canola, corn, peanut or safflower)

Mix together potatoes, scallions, flour, eggs, salt and pepper. Kids with freshly washed hands will have fun mixing these ingredients by hand.

Heat 1 tablespoon oil in a 10- or 12-inch non-stick pan over moderately high heat until hot, but not smoking.

Working in batches, spoon 1/8 cup potato mixture per latke into pan and flatten with a spatula. Reduce heat to moderate and cook until golden, about 1 1/2 minutes on each side.

Transfer latkes to paper towels to drain (and try not to eat too many before serving!).

For crisp latkes without using a lot of oil, add 1 tablespoon oil to the pan for each batch you make. Make sure oil is hot for each new batch.

To make ahead, freeze latkes and reheat in a preheated 400-degree oven for 10 minutes.

Makes about 2 dozen.

Chanukiah Project and Dessert

Looking for another quick idea? Lisa Kritz, director of Hertz Nursery School in Sharon, recommends making a cupcake chanukiah as a fun family project. All you have to do is make cupcakes (nine, to be exact!), decorate them and set them up as a chanukiah. You could save this for the last night of Chanukah, add candles and then enjoy as your Chanukah treat!
