Esrog Kugel Recipe
Esrog (or Lemon) Kugel
1 lb. medium noodles
¼ lb. salted butter
4 eggs, slightly beaten
juice of 1 lemon
rind of 1 esrog OR lemon
1 c. sugar
1 c. white raisins
¼ c. milk
¼ t. vanilla
cinnamon and sugar mixture for topping
Cook noodles and then run them under cold water.
In a large bowl, mix noodles and butter until butter is melted.
Add eggs, lemon juice and esrog or lemon rind.
Then add sugar, raisins, milk and vanilla.
Pour mixture into a greased pan.
Sprinkle with cinnamon and sugar.
Bake at 350º for 45 minutes.
