Biscotti di Pesach

1 1/3 c sugarcreated at: 2011-03-18
½ tsp salt
1/3 c olive oil
2 tsp vanilla
3 lg eggs
3 c matzah cake meal
1 c whole almonds

-Preheat oven to 350
-Toast the almonds for 5 minutes on the preheated almonds, let cool
-Cream sugar, salt, oil, vanilla
-Add eggs 1 at a time
-Add enough matzah cake meal to make soft but manageable dough
-Fold in the whole almonds
-Divide dough into 3 parts and shape into cylinders approx 15” long
-Bake for 25 mins.
-Raise the temp to 450
-Slice, put on baking sheet and bake for 10 mins.
