The only thing standing between guilt-free cookie-dough snacking is raw egg, which people like to avoid for health reasons, and raw flour, which just doesn’t feel right eating uncooked. So take these two ingredients out of the equation and you’ve got a dessert that’s OK to dig into without the baking step. You can even add a hint of apple sweetness in the name of Rosh Hashanah.

No-Bake Peanut Butter and Chocolate Chip Oatmeal Cookie Bites

For a slight apple sweetness, swap the water for apple juice.

4 tablespoons unsalted butter or margarine, softened
½ cup light brown sugar
1¼ cup old-fashioned oats
½ teaspoon salt
½ teaspoon vanilla
2 teaspoons water
2 tablespoons smooth peanut butter
1 cup chocolate chips

1. In large bowl, use whisk to cream together butter, sugar and vanilla. Add all remaining ingredients except for chocolate chips. Stir until combined. Stir in chocolate chips. Refrigerate until firm, at least 2 hours.

2. Spoon into portions the size of your choice and transfer to dinner plate. Keep refrigerated until ready to serve.
