I recently noticed that there is now a recipe on Rolo bags for Rolo Bites, the bite-sized concoction that originated on Pinterest and has taken the party circuit by storm. With only two or three ingredients, you can have a dessert that everybody—and based on its popularity, I really mean everybody—loves.
I’m always fascinated by recipes as simple as this one that take on lives of their own. So I made one of my own by combining two of these beloved recipes: cake pops and s’mores. I swapped marshmallows for Marshmallow Fluff because of its spreadability, and used the “pop” component of cake pops by putting the s’mores sandwiches on a stick. I put the chocolate on the outside, and froze the whole lot so it doesn’t melt too quickly when you eat it on a hot summer day.
It has the requisite short ingredient list and proven flavor combination. Will it be the next simple recipe to go viral? That’s up to you!
Makes 5 pops
10 graham cracker squares (5 two-square rectangles)
1 cup milk chocolate chips
½ teaspoon vegetable oil
1. Spread desired amount of Marshmallow Fluff on all 10 graham cracker squares. Lay wooden skewer or lollipop stick halfway up center of Fluff on 5 squares. Top with remaining 5 squares, making 5 cracker-and-Fluff-sandwiches. Transfer to plate and freeze for 15 minutes.
2. Meanwhile, line second plate with parchment paper. Combine chocolate and vegetable oil in medium bowl. Melt in microwave or over double boiler.
3. Remove graham cracker sandwiches from freezer and, working quickly, dip and roll in melted chocolate until completely coated. Transfer to parchment-lined plate and freeze until chocolate is completely solid. Serve.
