This recipe for Albanian fried dough, also called petulla, is from my grandmother. They are perfect for Hanukkah, and you can serve them with jam or feta cheese.

Albanian Fried Dough (Petulla)

Ingredients

  • 1 cup lukewarm water
  • 1 teaspoon sugar
  • 1 tablespoon active dry yeast
  • 2½ cups flour
  • 1 teaspoon salt
  • 2 tablespoons water
  • 4 cups vegetable oil, for frying

Directions

  1. Warm the water in the microwave for 30 seconds. Add in the sugar and active dry yeast. Let the yeast proof for 8 minutes.
  2. In a big bowl, mix the flour and salt.
  3. After the yeast has proofed, add it to the flour mixture. Add 2 tablespoons water and combine well. Cover the dough with a towel and let rise for one hour.
  4. In a dutch oven, heat the oil over medium heat.
  5. Grab small pieces of dough to form circle shapes with your hands, then place them in the oil and fry for 2 minutes on each side.
  6. Place on a tray lined with paper towels to absorb extra oil.
  7. Serve with feta cheese or jam.
