
My favorite was the Turbo Rocket, a multi-colored frozen treat that cooled me off on those sweltering summer nights. I probably spent the entire contents of my piggy bank on them throughout the months of June and July. If only I’d known how easy—and inexpensive—they were to make at home!
Multi-Colored Summer Popsicles
Makes about 10 to 14 popsicles, depending on the size of your molds
Ingredients
- 2 cups fresh strawberries, roughly chopped
- 1½ cups fresh blueberries
- 1 cup yogurt (plain, vanilla or Greek)
- 1 tablespoon plus 2 teaspoons lime juice, divided
- 1 tablespoon plus 1 teaspoon sugar, divided
Directions
- Add strawberries, 1 teaspoon lime juice, 1 teaspoon sugar and 1 teaspoon water to blender. Process until smooth. Transfer to bowl or cup and set aside. Rinse blender.
- Add blueberries, 1 teaspoon lime juice, 1 teaspoon sugar and 1 teaspoon water to blender. Process until smooth. Transfer to bowl or cup and set aside.
- In medium bowl or large cup, whisk together yogurt, 1 tablespoon lime juice and 2 teaspoons sugar until thoroughly combined.
- Spoon or pour strawberry mixture into popsicle molds until each mold is filled one-third of the way. Transfer to freezer and freeze for one hour.
- Remove popsicle molds from freezer and spoon or pour yogurt mixture into molds until remaining mold is filled halfway. Top with blueberry mixture until mold is full. Transfer to freezer until frozen, at least 4 hours and preferably overnight.
