You may recognize Annabel Rabiyah from many Beyond Bubbie’s Kitchen events. She is the head chef and co-founder of The Awafi Kitchen. The Awafi Kitchen is where Arab and Jewish cuisine are one and the same.
Annabel describes herself as a cousin of the Iraqi Jewish diaspora, sharing recipes and making meals as a tribute to her heritage. The Awafi Kitchen menus are recreations of the meals she grew up eating as a child, and the stories she heard of food in the old country. At The Awafi Kitchen she is cooking to preserve the lesser-known pieces of Jewish history and Iraqi history and to share some delicious recipes with our community.
Annabel will be making kubba, a classic Iraqi Kurdish dish. Hand-rolled dumplings are stuffed with meat and spices and cooked in a sour tomato broth. Annabel will demonstrate how to make the traditional kubba, as well as a vegetarian version with both semolina and rice shells.
