Join 18Doors and Sara Gardner for a Rosh Hashanah cook-along! Together, we will be cooking a delicious Sephardic Rosh Hashanah dish from Sara’s cookbook, “The Rosh Hashanah Seder Cookbook: Stories and Recipes from the Reform Jewish Community of Madrid.”
We will have an opportunity to discuss food as a gateway to Jewish culture and how we can introduce friends and family to Jewish culture and tradition through food.
Together, we’ll be cooking “Margarita’s Squash Fritters” and “Date Truffles.” You can choose to cook both of these with us, or just try out one of them if the ingredients aren’t to your liking.
For Margarita’s Squash Fritters:
- 1 medium butternut squash, peeled and cubed
- ⅔ cup flour
- 2 eggs
- ½ tsp. kosher salt
- ½ cup plus 2 Tbsp. vegetable oil
- Dried cherries and/or cranberries for garnish
- Sour cream (optional)
For Date Truffles:
- 8 ounces whole dates
- ¾ cup hazelnuts or walnuts
- ½ cup cocoa powder
- ½ cup shredded coconut (your choice of sweetened or unsweetened)
Sara Gardner is currently pursuing her Ph.D. in Sephardic culinary heritage and cultural identity from the University of Minnesota. Previously, she was the collaborations manager for the Jewish Arts Collaborative and the associate director of young adult programs at Hebrew College. Sara is also a published cookbook author and culinary historian specializing in the culinary heritage and cultural identity of the Sephardic Jewish diaspora, for which she received a Fulbright research grant in 2016. When she’s not working or writing about Jewish food and culture, you can find her baking sourdough bread, wandering in art museums or looking for her next great read.
